High Vibe Recipe: Shut The Kale Up's Roasted Coconut Peanut Butter Cookies

The holidays are a time to enjoy the sweet indulgences of life—while still trying to maintain a little balance during such a decadent season. That's why we turned to the mastermind behind one of our favorite Instagram accounts, Jeannette Ogden a.k.a. ShutTheKaleUp, for an insanely delicious and healthy(ish) peanut butter cookie recipe that's sure to be a hit with even your pickiest loved ones.

You'll need...
2 cups sprouted spelt flour

1 cup maple syrup
1 tsp baking soda
1 cup plain, smooth peanut butter
2 tbs Eating Evolved sweet + salty roasted coconut butter
1/3 cup olive oil
a pinch of pink himalayan sea salt
1 tsp organic vanilla extract

Simply mix everything in a bowl and bake at 350º for about 10 minutes!
Drizzle with peanut butter and sprinkle sea salt on top for a little extra flava, but either way, SO GOOD!
