High Vibe Recipe: Farmer's Market Pancakes
There's nothing better than letting a trip to the farmer's market inspire your next meal. Not only are you supporting local farmers, it helps you to feel connected with the community and the foods that are naturally in season. This dish was inspired by our LOVE for pancakes. It's so tough to find vegan and gluten free versions that compare to the original, but these are even better. We topped them with the best looking fruit at the farmers market, and added a fresh green salad on the side for a little savoriness and extra nutrients.

What You’ll Need for the Pancakes:
1 Cup of Its Wholesome High Protein Pancake Mix
1 cup of coconut milk
1 tsp apple cider vinegar
½ Cup of apple sauce
¼ cup of warm water
Cinnamon, nutmeg, and/or turmeric to taste
Finish with your choice of maple syrup and farm-fresh berries
Heat your skillet or non-stick pan to medium-high heat. Lightly grease with coconut oil. You’ll know perfect heat when a few sprinkles of water dance and disappear ;) Put all ingredients in a large bowl and whisk all ingredients until blended smoothly. Batter should be thick, but completely moistened. Spread batter to a 3” round on the pan and wait until the edges are golden brown and bubbles are visible at the center of the cake. Flip with flat spatula and repeat.
Warm fresh berries (we love blueberries) and maple syrup and pour the warm goodness over your hot fluffy cakes for optimal enjoyment!
