Fall Favorite: Cooking with Pumpkins

 Pumpkins are the perfect Fall addition to your culinary repertoire because of their high levels of fiber, potassium, and Vitamin A for healthy skin and eyes. We picked 3 of our favorite dairy-free and gluten-free pumpkin recipes that are perfect for an on-the-go pick me up this Fall. Pumpkin Protein Pancakes
Who doesn't like starting the weekend with a big stack of pancakes? This recipe will not only satisfy your sweet tooth, but it is also packed with protein, vitamins, and that delicious pumpkin taste.

1/4 cup egg whites

1 scoop vanilla protein powder

2 tbs vanilla almond milk

1 tsp cinnamon

1 tsp nutmeg

1 tbs ground flaxseed

 1/2 banana (mashed)

½ cup of pumpkin puree

Pour into a pan that has been sprayed with coconut oil cooking spray ~ on medium heat. Cook as you would normal pancakes. Serve with agave syrup or honey. 


Pumpkin Pie Protein Smoothie

This recipe come from our own Spiritual Gangster social media intern. Enjoy after a morning yoga session or as a mid day snack.


1/4 cup pumpkin puree

I cut up frozen banana

1 scoop vanilla protein powder

1 cup vanilla almond milk

1/2 tbsp cinnamon

1/2 tbsp nutmeg

1/4 tbsp vanilla 

Honey for taste

1/2 pecan halves sprinkled on top (optional)

Blend until smooth, & enjoy!
