Lemon Truffels from Kaleidoscope Juice


This week, we've asked our neighbors and friends at Kaleidoscope Juice how they beat the summer heat. So when they're not whipping together delicious green smoothies and acai bowls, co-creator Alexandra Maw loves these uber healthy, super tasty, and ridiculously simple Lemon Truffles. 



Lemon Drop Truffles

(makes 25-30)


2 cups coconut dates
zest and juice of 2 organic lemons
1 tsp crushed pink Himalayan salt
3 cups shredded coconut (unsweetened), divided
3/4 cup ground Brazil nuts (process in dry Vitamix container or food processor)
5 tbsp coconut oil
1 1/2 tsp vanilla extract
1/2 cup lucuma powder
2 tbsp maca powder.


1. Place dates, lemon zest/juice and salt in large bowl. Can start mushing with a fork, then use hands. Add 1 cup of coconut, lucuma, maca and ground Brazil nuts. Drizzle coconut oil and vanilla over. Mix well.

Lucuma powder – This low-glycemic sweetener contains beta-carotene, iron, zinc, vitamin B3, calcium and protein. We use Navitas Naturals Organic Lucuma Powder (available at Whole Foods).


Maca powder – Maca is a potent, ancient Peruvian superfood highly prized by Incan warriors to increase stamina, boost libido and combat fatigue. We order ours from Mountain Rose Herbs.


Himalayan pink salt – Contains 33 minerals!


Dates – A great natural sweetener that adds a fudgy texture – and they’re full of fiber to help prevent blood sugar spikes.


Brazil nuts – High in selenium, vitamin E, magnesium and healthy fats.
